Raw Homemade Nutella

Homemade Nutella! Who knew that such a thing could be created?

Now, granted this is the original's clean cousin which can be enjoyed (kinda) guilt free, I still stand by the fact that the original is the best. It's more reserved for cheat days now, but with this raw version, you can go wild and have it on your toast mid-week without the sugar hangover.

It sounds like it might be the most complex thing in the world to make, but it really is easier than you think.



Raw Homemade Nutella

What you'll need:
1.5 cups raw hazelnuts (to make this un-raw but still clean, roast the hazelnuts until crispy)
7 tbsp raw cacao powder
8 Medjool dates (Morrison's currently stock these in-store if you can't find them anywhere else!)
2/3 cups water (go in with less than you think you need and add more if required)
pinch of sea salt
2 tbsp coconut oil
2/3 tsp vanilla extract

1. Blend the hazelnuts in a high-powered food processor/blender until they are starting to stick together but not quite at a nut butter stage
2. Add all other ingredients to the mix until well-combined and smooth.
3. Spoon into a Kilner jar and store in the fridge.

So simple, non? I have to admit I didn't have any vanilla extract to hand so substituted with a tiny bit of rice malt syrup for a bit of added flavour/sweetness.

I've had this in the fridge for around a week now, and it's kept really well, so two thumbs up for this fine recipe.
