Super Simple Protein Pancakes



Pancakes. Who doesn't love them? Pancake day fired up my love for a good old stack again. So much so, that I've been making them not just for breakfast, but for tea too. Winner winner, pancake dinner.

These protein-packed versions are an ideal post-workout meal idea or a just a great way of getting more protein into your diet, and guess what? They are insanely simple to make.

So, wanna make pancakes? Here's the lowdown.



Super Simple Protein Pancakes (makes 4)

What you'll need:
1 banana
2 medium eggs (always free range!)
1 scoop protein powder (I use MP's Impact Whey Protein in Natural Vanilla or Sunwarrior Raw Protein Powder in Vanilla)
1/2 tsp cinnamon

Get flippin'
1. Put all ingredients in a blender and blend util you have a smooth batter.
2. Heat a frying pan with a little coconut oil and pour 1/4 of the batter into the pan to form your first pancake.
3. Cook on this side until little air bubbles start appearing, then give it a flip and cook on the other side for around 45 seconds.
4. Repeat 4 times and serve with your topping of choice - I went for frozen blueberries, Total 0% Greek yoghurt and almond butter.
